  • Tacos
  • 4 6-inch corn or flour tortillas, warmed
  • 1 cup sliced button mushrooms
  • 1 cup soy crumbles, corresponding to Lightlife Gimme Lean
  • ½ cup shredded carrots
  • ½ cup diced inexperienced bell pepper
  • ⅓ cup grape tomatoes, halved
  • 2 Tablespoons. chopped pink onion
  • ½ cup shredded cheddar cheese
  • ½ cup shredded Romaine lettuce

  • BBQ Sauce
  • 1 Tablespoon vegetarian Worcestershire sauce
  • 11/2 Tablespoons ketchup

  1. To make the BBQ sauce: Mix all 4 elements in bowl.
  2. To make the tacos: Warmth oil in nonstick skillet over medium warmth.
  3. Add the bell pepper, mushrooms, and carrots, and cook dinner, stirring midway by, for about 3 minutes (till the greens are softened).
  4. Add 2 Tablespoons of the BBQ Sauce and the soy crumbles, and cook dinner for about 8 extra minutes, (till the soy crumbles are browned).
  5. Fill the tortillas with the soy crumble combination. Prime with cheese, tomatoes, pink onion, lettuce, and relish (if desired).
  6. Serve with the remaining BBQ Sauce.
