Weight Watchers Artichoke Spinach Zucchini Boats recipe

 

2 Inexperienced/Blue Factors

Components:

  • 3 Zucchini or Summer time Squash (halved & seeds eliminated)

  • Salt & Pepper (to style)

  • 2 clvs Garlic (minced)

  • 1 tbsp Olive Oil

  • 1 can Artichoke Hearts (chopped)

  • ⅛ cup White Onion (chopped)

  • 1 bunch Spinach (chopped)

  • ½ cup Half Skim Mozzarella Cheese

  • ½ cup Parmesan Cheese (2 tbsp put aside)

  • Egg

  • 1 tbsp Scorching Sauce

  • 2 tbsp Worcestershire Sauce

  • Salt & Pepper (to style)

Instructions:

  1. Preheat oven to 375°. Place zucchini boats hole aspect up on baking sheet. Sprinkle with Salt and Pepper. Bake for quarter-hour (or till delicate)

  2. Warmth Oil in giant pan. Sauté garlic (30 seconds). Add Artichoke Hearts and Onion and sauté till onion is delicate (5 minutes). Add Spinach and prepare dinner till fully wilted (5 minutes).

  3. Stir cheese, egg, Worcestershire, scorching sauce, and salt and pepper in giant bowl till nicely blended. Add artichoke and spinach combination straight from the range. Stir till cheese is melted.

  4. Fill zucchini boats with combination and sprinkle with remaining parmesan cheese. Return to oven and bake for quarter-hour.
