  • FOR THE CARROT SOUP
  • 2 lb carrots, peeled and chopped (about 6 cups)
  • 3 tablespoons extra-virgin olive oil
  • 2 to three cloves garlic, chopped
  • 1 giant onion, chopped (1 cup)
  • 2 stalks celery, chopped
  • 1 bay leaf
  • 1 carton (32 oz) Progresso™ hen broth (4 cups) (or some other sort of hen broth)
  • 2 strips (2×1 inch every) orange peel
  • ¾ teaspoon salt
  • ⅛ teaspoon pepper
  • ½ teaspoon floor cinnamon
  • ⅛ teaspoon floor cloves
  • 1 cup heavy whipping cream
  • FOR THE GREMOLATA
  • ½ cup Progresso™ Italian model panko crispy bread crumbs (or some other sort of breadcrumbs)
  • 2 tablespoons butter
  • 2 tablespoons chopped contemporary Italian (flat-leaf) parsley
  • grated peel of 1 medium orange
  1. In 4-quart Dutch oven or saucepan, warmth oil over medium-high warmth.
