- FOR THE CARROT SOUP
- 2 lb carrots, peeled and chopped (about 6 cups)
- 3 tablespoons extra-virgin olive oil
- 2 to three cloves garlic, chopped
- 1 giant onion, chopped (1 cup)
- 2 stalks celery, chopped
- 1 bay leaf
- 1 carton (32 oz) Progresso™ hen broth (4 cups) (or some other sort of hen broth)
- 2 strips (2×1 inch every) orange peel
- ¾ teaspoon salt
- ⅛ teaspoon pepper
- ½ teaspoon floor cinnamon
- ⅛ teaspoon floor cloves
- 1 cup heavy whipping cream
- FOR THE GREMOLATA
- ½ cup Progresso™ Italian model panko crispy bread crumbs (or some other sort of breadcrumbs)
- 2 tablespoons butter
- 2 tablespoons chopped contemporary Italian (flat-leaf) parsley
- grated peel of 1 medium orange
- In 4-quart Dutch oven or saucepan, warmth oil over medium-high warmth.
- Add the celery and onions to the oil; cook dinner for a couple of minutes. Add the garlic; cook dinner for about 5 minutes or till the greens have gotten translucent.
